Firecracker Butter!~by Jenny Baxter of Jennys Kitchen

Posted by: thepinetree on 06/30/2009 05:29 PM
Happy Fourth of July! By now you have your menu planned, invited your guests, cleaned the grill, planted or arranged your red, white and blue flowers and purchased all your tableware, food and fireworks. Have you ever thought about playing the Sousa march, Yankee Doodle Dandy or the Marine Hymn as you set off your fireworks? Our Fourth of July would be incomplete without these dazzling, sparkling bursts of color in the yard, the street or at a public park. So what can I offer you that would be quick, easy and delicious? How about some firecracker butter for your corn on the cob, garlic bread or toasted buns for hamburgers and hotdogs?....

Posted by: thepinetree on 06/26/2009 08:38 AM
Angels Camp, CA...Yesterday we had the pleasure to interview recording artist Heath McNease who is playing three shows in the area this weekend. His music is great to listen too and as easily hard to define. He combines great acoustical music with hip hop, and other musical genres. While not strictly a Christian recording artist he does strive to record in his words "Clean Music" His first CD "The Heath McNease Fan Club Meets Tonight" has been selling well and he is currently recording his second CD....

Coming Soon To A Bypass Near You ~By John Hamilton

Posted by: thepinetree on 06/20/2009 10:07 AM
Angels Camp, CA...One of the topics making the rounds the last week our so is how will traffic heading down Hwy 4 continue on down the old Hwy 4 to get to Historic Angels Camp, nearby business or make the left hand turn to Frogtown, Melones or Sonora. Teichert will be installing an intersection there right after the Bypass has been opened. Reports have been circulating that this may take as long as a month. One thing to remember is that this project has been on Teichert Time. What is "Teichert Time"? Well Teichert Time is when you take a normal construction estimate and cut it in half or even less. So if the public estimate is 4 weeks I would bet it...

Peach Glazed Duck Breast atop Mixed Greens~by Jenny Baxter of Jennys Kitchen

Posted by: thepinetree on 06/24/2009 09:38 PM
I received a call from Chef James at Ironstone Vineyards asking me to help him judge a bar-b-cue competition. Since this was the third year I had been asked and I knew how much fun it was I readily agreed. It turned out to be a beautiful day with pleasant temperatures, fun-loving contestants and an enthusiastic group of spectators waiting to sample some great foods. As Chef James gave us our instructions for judging he mentioned there was a new category this year. He called it the "Open Category." Whatever could be grilled could be entered. Some of the teams became very creative with their rabbit, venison and duck dished in addition to the traditional meats that are usually grilled. So, my thought was to share a fabulous grilled duck breast with mixed greens and sliced fresh peaches with you. This summer delight teams marinating, grilled and crunching for a most delicious meal. I found this recipe is best if the duck breast is grilled rare. Chicken can replace the duck if you are not a fan of wild game, but please do not grill it rare!...

Is Stripping Funding for the Visitors Bureau a Good Idea? ~By John Hamilton

Posted by: thepinetree on 06/23/2009 10:45 PM
San Andreas, CA...One of the proposed budget casualties is the county's funding for the Calaveras Visitors Bureau. The CVB currently receives 33% of the Transient Occupancy Tax or TOT tax that is levied on Hotel, Bed & Breakfast, and other overnight stays. One of the justifications of the TOT tax and any possible increases in the TOT tax rate is that a portion of this tax goes to increasing the visitors to the county. In 2007 according to conservative estimates over $153,000,000 in revenue within the county was...
