"Chef Chat" With James Lehman....He Has Great Tips for Your Holiday Cookies

Murphys, CA...Ironstone's Executive Chef James Lehman has another great Edition of Chef Chat for you viewing pleasure. In this episode Chef James gives you some great tips on making the perfect cookies. Let Chef James guide you on your quest for the perfect cookie...




If you are on a lower speed connection or a Windows Mobile Phone

Cookie Base
1# Flour
9 oz Brown sugar
14 oz granulated sugar
1/2 oz Baking soda
pinch of salt
1# 8 oz All purpose flour
8 oz eggs
20 oz fillings
1# Butter

Mix together the four, baking soda and salt in a small bowl. Mix the butter and sugar together in the bowl of a standing mixer fitted with the padle attachment. Add eggs one at a time unitl incorporated. Add the four mixture in 3 additions, making sure the four is incorporated before you add more. Add the fillings. Do not over mix your dough. In all steps, stop mixing once the ingredients have all come together. Spoon out 1 1/2 ounce scoops onto a baking sheet and bake at 350 for about 15 minutes.
