Chef Chat with Executive Chef James of Ironstone Vineyards....This Week James Talks "Biscuits"
Murphys, CA...This week on Courses #8, the ever so popular, Chef James tells us how to make yummy Buttermilk Biscuits. This week Chef James also has the assistance of Paul Mundy, one of Ironstone;s Event Coordinator's, who shows how easy it is for anyone to master James's Recipes. In addition to teaching a perennially sold out series of cooking classes, Ironstone is one of the finest places in our area to host meetings, Weddings, Corporate Events and much more. All of these events can be catered by Chef James and his staff.....

Chef James is a graduate of The Culinary Institute of America in Hyde Park New York.
Buttermilk Biscuits
From Cooks Illustrated Baking
1 Cup AP Flour
1 Cup Cake Flour
2 tsp. Baking Powder
½ tsp Baking soda
1 tsp sugar
½ tsp salt
8 Tbs. Cold Butter, cut into ¼ inch cubes
¾ Cup Buttermilk, cold
Place both Flours, salt, baking soda, baking powder and sugar in the bowl of a food processor fitted with the metal blade. Pulse 6 times. Next add the butter evenly to the mixture and pulse 12 times (1 second pulses). Lastly, add the buttermilk evenly over the top and pulse another 8 times until mixture is even. Flour a work surface and dump out the dough onto it. Press the dough firmly, into a rough ball and then divide into 8 pieces. Make sure each piece is no taller than about ½ inch. Place the biscuits onto an ungreased cookie sheet and bake at 450 degrees for 10 to 15 minutes, or until biscuits are golden brown. Serve immediately.
