Strawberry Omelet!
*Note: ingredients listed make 1 omelet
3 1/2 oz. fresh strawberries, sliced, plus more for topping
1 Tbls strawberry preserves
1 tsp brown sugar
1 tsp butter
3 large eggs
1 tsp. coconut rum
crushed almonds
shredded coconut
confectioners’ sugar....
1. Toss sliced strawberries with preserves and brown sugar until well coated.
2. Heat an 8-inch skillet over medium heat. Add butter and wait until it is bubbling, then whisk eggs and pour into skillet. Cook until eggs are set on bottom but still moist. Lift edges gently with a silicone spatula, tilting pan to let uncooked eggs run under.
3. Spoon strawberry mixture over half of the eggs. Cook just until eggs fluff. Remove from heat and sprinkle with coconut rum. Fold omelet in half to enclose filling and slide onto a serving plate. Top with remaining strawberries, crushed almonds, and shredded coconut. Sprinkle with confectioners' sugar. Makes 1 omelet.
