This Weeks Blue Ribbon Recipe "Fruity Cloud Salad"~by Calaveras County Fair & Jumping Frog Jubilee
Fruity Cloud Salad
1 can crushed pineapple (undrained)
1 box instant lemon pudding (sugar free)
mix these 2 ingredients together well and then stir in the following:
1/2 can mandarin oranges (drained well)
1/2 c frozen sliced strawberries (thawed and drained)
1 carton of cool whip (thawed) (sugar free or lite)
1 1/2 c mini marshmallows....

Stir well and chill for at least an hour to let it set up and serve. I called it Fruity Cloud Salad because it reminds me of puffy clouds at sunset with a hint of red and orange...I know, I'm goofy that way but it's true... Also, I think a sliced banana would be yummy in it as well, going to try it like that next time
