This Week's Blue Ribbon Recipe "Lemon Sponge Pie"~by The Calaveras County Fair & Jumping Frog Jubiee
Frogtown, USA.....Here is this weeks Blue Ribbon Recipe "Lemon Sponge Pie" by Connie Field, of Janesville, Wisconsin. She won Second Place, Dairy Delight Contest, at the Walworth County Fair, in Elkhorn, Wisconsin in 2005.
Filling:
3 Tbls unsalted butter, room temperature
1 1/4C sugar
4 eggs, separated
3 Tbls flour
Pinch of salt
1 1/4C milk
2 Tbls grated lemon zest
1/3 C lemon juice
1 unbaked 9-inch pie shell....
1. Preheat oven to 375F.
2. To make filling: in a large mixing bowl, cream butter and sugar until light and fluffy. With mixer running, add egg yolks, flour, salt, milk, and lemon zest and juice. beat until well blended.
3. Ina separate mixing bowl with clean beaters, beat egg whites until fluffy but not dry. Fold egg whites into the filling.
4. Pour filling into unbaked pie shell. Bake for 15 minutes. Reduce temperature to 300F and baker 45 minutes longer, or until top is golden and toothpick inserted in center comes out clean. Makes 1 single-crust pie.
