Blue Ribbon Recipe... Whiskey Apple Pie
Double-crust pie pastry
2 Tbls. all-purpose flour, plus more for rolling out dough
6 or 7 Golden Delicious apples
1/3 C sugar
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. salt
1/2 C bourbon whiskey
2 Tbls. lemon juice
2 Tbls. butter, cut inot small pieces
Whipped Cream.....
1. Preheat oven to 425 F. Divide pastry in half. Roll out one half on a lightly floured surface and fit into a 9-inch pie plate. Roll out the remaining pastry for the top crust and set it aside on a sheet of waxed paper.
2. Peel, core and halve the apples. Cut into 1/4-inch-thick slices, about 7 to 8 cups
3. In a 4-quart saucepan, whisk together sugar,flour, cinnamon, nutmeg, and salt. Whisk in bourbon whiskey and lemon juice until evenly blended. Cook over medium-high heat, whisking frequently, until the mixture boils and thickens slightly. Add apples and stir until evenly coated. Continue cooking, stirring continuously, for 3 minutes. Set aside to cool, stirring once or twice, for 20 minutes.
Bake until Brown.
