A New Year's Recipe~by Jenny Baxter of Jennys Kitchen
Happy New Year Everyone! Well, you’ve recovered from your New Years Eve celebrating and you can once again look at “the hair of the dog that bit you!” So what can you do with your extra champagne? How about preparing a little of your leftover baked ham from New Years Day into a totally different dish and making some great breakfast cocktails? A fun Sunday brunch would be just the arena to showcase these delicious recipes!

Ham & Cheese Bites
1 package won-ton squares
½ cup minced ham AND sliced green onions
1 ½ cups shredded Swiss cheese
6 eggs
Cup half & half
Garlic powder, salt, and cracked pepper to taste
¼ cup minced fresh parsley
Whole nutmeg
Spray 36 mini muffin tins with olive oil. Preheat the oven to 400 degrees. Press a wonton square into each mini cup and divide the ham, green onions and cheese between the tins. Whisk together the eggs, half & half and seasonings into a pitcher and pour even amounts over each cup. Sprinkle with the parsley and grate a little fresh nutmeg over the top. Bake for 15 minutes. Remove from the oven and serve warm.
Sparkling Cranberry Chill
Stir together:
4 oz. champagne
2 oz. cranberry juice
Pour into a chilled champagne flute and decorate with an orange wedge
Peachy Champagne
Place in each 6 oz. chilled champagne glass:
1 frozen peach slice
Pour into the glass:
1 Tablespoon peach nectar
Fill with champagne
