Father's Day Ribs!~by Jenny Baxter of Jennys Kitchen

Happy Father's Day....On the third Sunday in June this special holiday is devoted to honoring all 64.3 million dads' across the United States! It is a time to express to all biological fathers and all the wonderful men who have been a father figure in our lives how much we appreciate them and what they mean to us. There are numerous ways to celebrate this day. Know what his interests are and then plan the day around this. Several of you may want to go golfing with dad or be his caddy if you don't golf. Some may want to.....

bar-b-cue his favorite cut of meat or selection from the sea. A few may choose to take dad fishing and clean the days catch and filet it properly. Others many want to take dad wine tasting and be the designated driver. And still a number of you may have a desire to treat dad to a sporting event. There are ways to entertain dad without spending allot of money. Make a collage of his life in pictures as tall as he is. Bake him a batch of his favorite cookies or brownies. Wax and wash the car for him. Make him a card. Read him a story. Weed the garden. Clean the garage. Just give dad a full day of you no matter what you do or where you go. Although my dad has been gone for thirteen years I still think of all the great fun we had on Father's Day. When I was small my siblings and I would jump into my parent's double bed and he would read us the Sunday comics. Then my mom would make a huge breakfast and we would drive to a nearby pond and feed the ducks heels of bread my mother saved just for this occasion. When it was time for mass off he would go with me on his shoulders walking a couple of miles to get there. He must have really loved walking because when he was growing up in Washington he never missed a day of walking to school no matter what the elements and he had a certificate to prove it. As I got older our Father's Day were spent picnicking with extended family members. And at age eleven, when I first began to cook, I made the Fathers Day dinners. I am sure they were not very tasty since I was just learning how to cook, but he never complained and always said how good they were. I was so blessed to have such a terrific dad then and now I am blessed to have two father figures in my life Jim Lashbrook and Dutch Bobp who share their wisdom with me, help me in my times of need and make me laugh! Thank you. So, I am dedicating these recipes to the three of them. Enjoy!

Beer Marinated Baby Back Ribs

3 racks baby back ribs

Quart beer

2 cups brown sugar

1 cup cider vinegar

1 Tablespoon chili powder

1 teaspoon cumin and dry mustard

2 teaspoons red pepper flakes

Place the ribs in a container large enough to hold them. Mix the other ingredients in a large bowl and pour on top of the ribs. Refrigerate overnight turning once. Grill basting with the marinade on indirect heat or use a smoker Serves 6



Cabernet Country Style Ribs

Simmer until thick about 20-25 minutes:

½ cup apple cider vinegar AND brown sugar

¼ cup white sugar AND Cabernet

1 cup ketchup and chili sauce

1 Tablespoon Worcestershire sauce

2 teaspoons paprika and onion powder

1 Tablespoon garlic powder

Salt and pepper to taste



2 lbs. country style ribs

Bake the ribs at 450 degrees for 20 minutes. Reduce the heat to 300 degrees and cook 30 minutes. Drain the ribs and cover with the simmered sauce. Bake one hour. Serves 2

Well, it's thyme to go.
