"Leap Year Date Nut Bread" He's the Date and You're The Nut!~By Jenny Baxter of Jennys Kitchen
Welcome Readers....2008 is a Leap Year! So, instead of a 365 day year we will have a 366 day year. Leap Years occur every four years which helps synchronize the calendar year with the solar year. For all you non scientific readers out there this simply means the amount of time it takes our earth to complete its orbit around the sun....
Now, I always thought Leap Year was created for women to be the suitors in romantically inclined relationships. It all started in Ireland when St Brigit complained to St. Patrick about women having to wait so long for a man to propose. His answer was that females could propose on this one day in February in a Leap Year.
I never could understand why women were in such a hurry to pick up dirty socks, put the toilet seat down when walking past or going into the bathroom, drop what they were doing to run into the kitchen when their husband called out because he could not find what he was looking for in the refrigerator or cupboard or having to share closet space!
But for those of you who want to carry on this tradition of having the right to run after an unmarried man to propose marriage, (we here in the USA called this Sadie Hawkins Day), I have some ideas for you. I say ideas because if you could not read between the lines and take my “heads up” about marriage, there is no hope for you!
So, how about trying some of these modern day proposal techniques; 1.) unveiling a huge framed picture at his next business meeting that says, “Will you marry me?”. 2.) after a long sweaty climb to the top of Half-Dome pass him a bottled water with the ring around the cap. 3.) drop the ring in his Pilsner glass of beer and hope he won’t swallow it as he guzzles the amber liquid. 4.) push the ring in a slice of his favorite cake and pray he does not choke on it. Or even better yet, leave the proposal up to him!
But to ensure that you have a great date no matter where you are or what you are doing enjoy these tasty date bars.
Leap Year Date Nut Bread
(He’s the date and you’re the nut!)
4 Tablespoons butter
1 cup chopped dates
¼ cup each brown and white sugar
Place all the ingredients in a large bowl. Pour:
¾ cup boiled orange juice over the ingredients and let this sit for 10 minutes.
At the end of ten minutes when the mixture has cooled stir well to combine all the ingredients. Add:
1 beaten egg
Stir well.
Then add:
2 teaspoons baking powder
2 cups flour
½ cup chopped walnuts
½ cup coarsely chopped orange sections
Zest of one orange
Mix all the ingredients by hand. Pour the batter into a greased loaf pan and bake in a pre-heated 350 degree oven for 45 minutes. Check for doneness and bake five minute longer if necessary. Makes one loaf
Orange Butter
Mix in a bowl and place into a decorative crock:
Stick butter
½ cup orange marmalade
Teaspoon honey
Zest of a small orange
Keep It Sensuously Simple (A food tip from Jenny) If you do not have a zester carefully peel the rind from the orange using a sharp knife making sure to not get any of the white pith, which is bitter, onto the peelings. Finely julienne the rind and add it to the mixture.
Well, it’s thyme to go.
