This Week's Blue Ribbon Recipe: Old-Fashioned Cream of Tomato Soup by Calaveras County Fair & Jumping Frog Jubilee

Old-Fashioned Cream of Tomato Soup

2 cans (32 oz. each) diced tomatoes

1 can (9 oz.) chicken broth

2 Tblsp. unsalted butter

2 Tblsp. copped onion

Pinch of baking soda

2 Tblsp. sugar

2 Cups heavy cream.....



1. Combine tomatoes, chicken broth, butter, onion, baking soda, and sugar in a large saucepan over medium-high heat. Heat just until bubbling, then reduce heat and simmer for one hour.

2. Heat the heavy cream in the top hlaf of a double boiler until warm. Add cream to hot tomato mixture an stir to combine. Makes about two quarts.
