Can you believe it, only 2 weeks until Christmas? I don’t know about you, but on Christmas morning the last thing I want to do is stand in the kitchen making breakfast when I know I will be preparing a huge feast for dinner. Not only that, but I want to spend time relaxing and enjoying this special occasion with my family. So, for the past several years I have been preparing a variety of breakfast casseroles that I can make the night before and just pop in the oven Christmas morning. For those of you that share my philosophy here is a recipe you and your family will really enjoy.....

Canadian Bacon Pudding
16 slices multi-grain bread
Butter
½ lb. grated Vermont white cheddar cheese
8 slices Canadian bacon
6 beaten eggs
4 cups half and half
Salt and white pepper to taste
One teaspoon Dijon mustard
Butter a 9x13 baking dish. First, butter the bread slices on both sides. Then place eight slices of bread in the bottom of the dish and sprinkle the cheese over the bread. Next place a slice of bacon over each slice of bread. Then place the remaining slices of bread on the top. Combine the eggs, half and half, salt, pepper and mustard in a pitcher. Pour over the bread mixture. Cover and refrigerate overnight. Preheat the oven to 350 degrees. Place the casserole dish in a water bath, which is a container large enough to hold the casserole and pour water in the vessel until it comes half way up the sides of the dish. Bake for an hour or until puffed and brown. Cut into 8 squares and serve.
Accompany this with a little fresh fruit salad and there you have it.
