Murphys, CA....Chef James Lehman has been on vacation, it is so nice to have him back for "Chef Chat." This week James gives us tips on how to prepare the perfect Meatloaf. He lets us know just the right ingredients and techniques to prepare moist, flavorful, envy of your neighbors, Roasted Garlic and Pork Meatloaf. Video and Recipe enclosed...
Roasted garlic and pork meatloaf

4 lbs Pork, ground
3 eggs, mixed
1 Cups Roasted garlic, mashed
1 Cup red onion, diced small
2 Cups breadcrumbs
1 can diced tomatoes (14 oz.)
1 cup cheddar cheese, Diced small
½ Cup parsley, chopped
2 ½ Tbs. Kosher Salt
1 Tbs. Black pepper
Place pork and all other ingredients in a large bowl and mix very well. Season with salt and pepper. To test seasoning, place a small amount of the mixture in a bowl and microwave it until it is cooked through. Taste for proper seasoning and adjust if necessary. Place mixture on a lined baking sheet and form into a loaf. Bake at 350 degrees until a thermometer reads an internal temperature of 130 degrees, about 45 minutes to an hour.
