Cost Effective and Simple Recipes~by Mary Overton of Angels Camp
Here is a much more affordable and simpler version of Bacon Wrapped Chicken Livers. Leave the Chicken Livers out. It is still fantastic. I have been serving these for over 30 years and they are a huge success every time. Bacon Wrapped Water Chestnuts.....
Bacon Wrapped Water Chestnuts.....
Oven Setting: Broil Move oven rack accordingly.
Serves: How ever many you want. I make two batches for 12-20 people.
Ingredients:
1 Package Bacon Thin or thick cut it does not matter. Cut bacon strips in half. Doing this as whole section is much easier.
3 Cans Whole Water Chestnuts- drained
Equipment:
Large broiler pan
Tongs
Napkins or paper towels
Plate or aluminum foil placed on counter
Wrap each water chestnut in half piece of bacon. Place on broil pan with edge side down. Line them up tightly so more will fit.
Broil about 3 minutes and then turn them over using tongs. Keep an eye on them and repeat broiling and turning over until they are crisp. If using a 12x18 broiler pan it may be necessary to switch the chestnuts around on the pan for even cooking. I prefer this size pan because I can fit all of them in one cooking session.
Place cooked chestnuts on napkin covered plate or napkin covered aluminum foil and let drain. Usually these tend to disappear while cooling so allow yourself extras.
Arrange on another plate and serve. These can be placed next to each other and stacked.
ENJOY ANY TIME OF THE YEAR
