Summer Culinary Students Host Thursday Luncheon Buffets~By Doug Lau
Students enrolled in Columbia College’s Summer Culinary Institute are inviting the public to specially-themed luncheon buffets every Thursday from 11:30 a.m. to 1:30 p.m. from now through Aug. 7th. Currently in its seventh year, the institute provides intensive training in commercial food preparation and as part of the program, students choose the various culinary menus with regional or international themes, prepare the selections and serve at the weekly buffets.....

“Our goal is to create a truly enjoyable experience for our customers with meals that are prepared by hand with fresh ingredients,” said Gene Womble, the college’s hospitality management program coordinator. “Our 17 culinary students this summer participate in a complete teaching process from planning menus to critiquing each meal afterwards.”
The Thursday buffets are served in The Cellar Restaurant on the lower level of the Manzanita Building. Cost is $8.25 per person, which includes the luncheon, a beverage and dessert. Any gratuities are optional.
As an example, July 17’s menu will offer diners “A Taste of Portugal.” The fare will consist of a Portuguese cheese tray, Portuguese sweet bread, feijao verde com coentro e alho, green beans with coriander and garlic, Portuguese rice, tilapia a la Portuguese, chicken with port wine and raisins, and pasteis de nata or flan.
“If you intend on coming to our buffets, better get here early,” said Womble. “We draw people from as far away as San Jose and Sacramento – plus from all over the valley.” For more information on the buffets or the college’s culinary and pastry arts program, call 588-5135.
