This Week on "Chef Chat", Chef James of Ironstone Vineyards Talks "Pizza Dough!"

Pizza Dough
By Chef James Lehman
Makes one thin crust pizza
2 Cups AP Flour
1 tsp dry yeast
2 Tbs. Honey
½ Cup Warm Water + 2 Tbs.
pinch of salt
¼ Cup olive oil

Add yeast and water to the bowl of a standing mixer and let sit for about 1 minute. Add rest of the ingredients to the bowl and mix on slow till the mixture forms a ball. You might need to put a little more water in if it looks dry and is not coming together. When mixture does come together, remove dough from bowl and knead with your hands for about 5 minutes. After kneading, place back in bowl with a small amount of oil and cover with plastic wrap. The oil will keep the dough from sticking to the bowl after it rises. Let sit in a warm part of the kitchen till it has almost doubled in size. When ready, remove dough from bowl and roll out in a circle @ 16 inches in diameter. Top with pizza topping and bake at 425 degrees until crust is nice and golden brown.

Basic Pizza Sauce

Makes enough for 2 pizzas

1, 14oz can Tomato Sauce
½ tsp. Oregano, Dry
½ tsp. Marjoram, Dry
¼ tsp Salt
¼ tsp Black Pepper
Place all ingredients into a small saucepan and simmer for 10 minutes.
