"Macadamia Crusted Halibut"~By Jenny Baxter of Jennys Kitchen
Greetings from Las Vegas....Well, I am sure “ole’ blue eyes” never dreamed his stopover in the middle of the desert would grow to the Metropolis it has become in addition to being an adult Disneyland! Where do you start? Do you walk inside or outside? My plan would include both.....
Starting at the Luxor, my favorite place, I combed the inside of that hotel like a detective. I was spellbound with the entire array of Egyptian artifacts, reproductions of course, and imagined I was Cleopatra waltzing amongst the marbled halls dripping with gold jewelry. (And for those of you that know me, you know that I can’t live without my gaudy jewelry)
From here we visited The Venetian where I actually felt like I was in the country of my dreams, Italy, as I rode the gondola after strolling the market square. The Excalibur put me in the midst of King Arthur and the Knights of the Round Table as I, a humble goddess, walked with the Druids enveloped in the mists of the cool waters. New York New York put me in that “New York State of Mind,” (thank you Billy Joel) as we reminisced about the years I spent in that electrifying part of the USA! But it was time to take a break and come back to reality. I was hungry!
So what do you eat when you are in the land of plenty? I was going to splurge! Macadamia Crusted Halibut, Caesar Salad, and just maybe, a dessert. Fish in the desert I thought. You bet, especially when it is flown in daily.
Macadamia Crusted Halibut
1 lb. Halibut fillet
Package Sexy Seasoning by Jenny’s Kitchen Sensuous Seafood Rub
½ pound finely chopped Macadamia nuts
Keep It Sensuously Simple (A food tip from Jenny) Place the nuts in a quart size Ziplock bag. Using a rolling pin, crush the nuts to the desired consistency.
½ cup lemon olive oil (Calaveras Olive Oil)
In a bowl place a ¼ cup rub and the oil. Mix. Add a little more oil if the mixture is too thick. In a separate bowl place the nuts. Brush the oil mixture onto the fish, skin side down and then press into the nuts. Place the fish flesh side up on a parchment lined baking pan and bake at 375 degrees for 10 to 15 minutes. Serves 2
As the golden sun set over the horizon and the lights of the city dazzled its inhabitants we hiked the remainder of the strip.
We arrived just in time to see the colorful waters dancing to classical music in front of the Bellagio set against the dark backdrop of the heavens. Laying my head on his shoulder I thought that life doesn’t get much better than this. Hearing a thunderous sound we raced to Treasure Island and watched the battle in progress as the huge ship sunk right before our very eyes!
With blisters on my heels, new shoes, and realizing how far we had walked we hailed a cab back to the hotel.
Of course I could not just go straight to my room. I had to make my yearly $20 deposit before I left, big gambler that I am!
But, the real highlight of the trip was experiencing “Love” at Cirque Du Soleil’ Talk about a flash back to the 60’s! My senses of hearing and seeing were going crazy as the performance unfolded above around and below me. Breath taking! How I loved the Fab Four during that era. If only I had brought my headband and love-beads.
Well, it’s thyme to go.
