Murphys, CA...(The is a classic repost of a Chef Chat great for colder weather) This week on Chef Chat, the ever so popular Executive Chef James Lehman of Ironstone Vineyards, talks Stews on "Chef Chat." Chef James is a graduate of the prestigious The Culinary Institute of America and teaches a wonderful series of usually sold out cooking classes on a variety of topics....

Braised Chipotle Pork
By Chef James Lehman

4 # Pork Butt, cubed into 1-inch pieces
2 Bottles Cabernet Franc
2 Cups Orange Juice
2 Cup Pineapple juice
2 Cans Diced Tomatoes, drained
2 Chipotles en Adobo, minced
1 Red Onion, sliced
1 Red Bell pepper, sliced
½ Cup Garlic, sliced
2 Cups Scallions, sliced
1-Cup Brown Sugar
1 ¼ Cup Tomato Paste
2 tsp. Thyme, dry
1 Tbs. Dry Mustard
1 Tbs. Black pepper
3 Tbs. Salt
Sour Cream, optional


In a large, deep pan, heat some oil over high heat. Add the pork to the pan and sauté until golden brown. When pork is ready, add all other ingredients except for the scallion and tomato paste, lower the heat to medium, and simmer for @ 1 hour. After an hour, stir in tomato paste and simmer for an additional ½ Hour to 45 minutes. When pork is tender, stir in scallions and serve in bowls. Top with sour cream if desired.
