Cranberry Cosmos & Festive Roasted Nuts (Season 1) Episode 10: J - Jigger.

Angels Camp, CA...In this episode of Elémentaire TV, Jenny makes a cranberry cosmopolitan and David makes some festive roasted nuts. Elémentaire is the creation of two professional cooks dedicated to helping take the mystery out of making delicious meals from scratch. Our goal is to educate through the use of culinary terms and techniques and also inspire, through the use of the freshest seasonal ingredients, all who watch to make their own meals to enjoy at home. Every Sunday Night at 8pm we will premier another, great, new episode of Elémentaire with Jenny & Dave.






J - Jigger


definition: [unit of measurement] 1 1/2 oz of liquid (usually alcohol)

Cranberry Cosmopolitan

A deliciously festive kind of cocktail.


1 ½ oz. vodka
1 ½ oz. Grand Mariner


Technique:

Place in a shaker with ice. Shake. Pour into a champagne glass and top with a splash of cranberry juice.

Spiced Roasted Nuts

A side of nuts complimenting the cosmo.


2 cups raw almonds, cashews and macadamia nuts
2 TBS unsalted butter, melted
2 TBS raw honey (optional)
3/4 tsp ground nutmeg
1 tsp ground cinnamon
1/2 tsp ground cardamom
1/4 tsp salt
Pinch of cayenne
Sea Salt


Technique:

Preheat oven to 400°.

Line a baking sheet with parchment. In a bowl toss the nuts in the melted butter. Spread the raw nuts on the baking sheet. Toast in the upper rack of the oven for 10 minutes till lightly golden. While the nuts are in the oven, mix together the nutmeg, cinnamon, cardamom, salt and cayenne in a small bowl. When the nuts are done toasting, remove the baking sheet from the oven and pour the honey over the almonds (do this right on the baking sheet). Use a spoon or spatula to coat the almonds well on all sides. Then sprinkle the spice mixture over the almonds and mix again to thoroughly coat. Take a big pinch of sea salt and sprinkle over the almonds. Return the almonds to the oven for another 10 minutes. Remove from the oven and right away use a spatula to remove the almonds from the parchment paper to a plate or container to cool. Serve.
