Ten Delicious Ways to Boost Your Antioxidants! Dr. Andrea Sullivan, Inner Balance Sports Chiropractic

Murphys, CA...Want some delicious ideas on increasing your antioxidant score? Try one or more of the following ideas for six weeks and watch your skin carotenoid score increase by 30%. Also, remember to include a little fat, like 10 almonds or a teaspoon of olive oil, to help increase the absorption of carotenoids into your body....






 
  1. Fresh tomato salsa is loaded with lycopene. Great as a dip for homemade corn tortilla chips or as a topping on potatoes.
  2. Baked sweet potato fries are fabulous. Cut sweet potato into thin slices or ½ inch strips. Spray lightly with olive oil & bake in a 400" oven for 10 minutes.
  3. Smoothies are a great way to boost antioxidants! Try this one on for size: Blend: 1 Cup Raw Washed Kale, chopped, remove stems ( or spinach or other greens) 1 carrot, 1 celery stick, one apple and an orange (you could also use any frozen fruit). Add a little water. Option: Add 2 Tb. protein powder or flax seed for additional fiber.
  4. Papaya and mangoes make terrific salsas as additional sides to roasted meats. Mix chopped fruit with 2 Tb chopped red onion and jalapeno jelly to "kick it up a notch."
  5. Spinach salads are loaded with lutein, the carotenoid that prevents age related blindness. Toss in crumbled feta cheese, Marisolio blackberry ginger balsamic vinegar and dried cranberries for a blend of sweet and sour flavors.
  6. Bring a bag to work each Monday with clementines, carrots, apples and other veggies or fruits to snack on during the day.
  7. Apricots are loaded with carotenoids. Try a handful of dried apricots & almonds for snacks
  8. Carrot juice is lower in carbs than fruit juices but packed with beta-carotene.
  9. Have a contest with a co-worker to see how many servings of veggies and fruits you can have in a day.
  10. Snack on sliced red, orange, yellow or green bell peppers dipped in hummus.
