"Jack Sprat could eat no fat...His wife could eat no lean; And so betwixt the two of them, They licked the platter clean!" Mother Goose Nursery Rhyme. "Have you ever pondered why particular foods are named certain things that have nothing to do with what they are? Take plum pudding for example -- not a plum to be found; or Chinese Duck sauce, actually based on pureed pumpkin; or Boston cream pie (if that's a pie, I tremble at the real meaning of Baked Alaska). Not to mention such oddities de cuisine as oyster sauce (nary a one)...
hard sauce, angel and devil's food cake, monkfish and sweet breads to cite but a sampling. And then we come to the "mocks" -- foods that look and taste like their authentic counterparts but cater to people whose diets or metabolism can't abide one substance or another. For not unlike Jack Sprat and his rotund spouse, special diets are nothing to joke about.
For people who must be hard-line refuseniks about milk, corn, wheat, meat and non-kosher foods, the theme of "mock" or culinary facsimiles is especially pertinent. While most of us think about nothing but calories or grams of cholesterol when it comes to eating, there are many individuals who face a daily dilemma of doing without entire food groups. Individuals such as vegetarians, as well as those who suffer food allergies, or have special dietary needs (such as diabetic, kosher or high calcium diets). For these individuals must carefully construct long time eating alternatives that must include or exclude a variety of foods or family of foods. Many infants in particular experience a transient allergy to milk, wheat, and eggs - making common things like bread, noodles, puddings, and cookies off limits.
This fun but helpful collection of "fabulous fakes" and "miraculous mocks" are unique recipes created in response to special diet requests but they happen to be darn good food -- whether you are on a special diet, or love fun food that is tasty.
If you have an allergy kid or know adults who have a gluten or flour allergy, life can get pretty complicated. And while children often can outgrow this early intolerance to flour (milk, eggs, and corn often figure in this early food allergy as well) it's not easy for them or adult eaters to avoid such things as basic as a cookie or slice of toast. Flour allergy, probably more than anything other, cramps one's eating style. The Flour Free Crisp Oatmeal cookies recipe is designed without flour or milk and results in a large batch of macaroon-like cookies good for the whole household. Leave out the egg too if that's a problem.
People who experience lactose intolerance are always on the look-out for milk-free recipes of some standard foods. The Mock Chocolate Cheesecake recipe below is decadent and satisfying while dairy free. Chilled, it is almost indistinguishable from real cheesecake. If chocolate, high fat, AND lactose are your Achilles heel, the tofu-based Dairy Free Mock Banana Orange Cheesecake is a good choice. One diner's lactose intolerance is another diner's calcium hit. On the opposite side of the coin are people who need extra dose of calcium as part of their dietary requirements or therapy. Surprisingly, rhubarb scores high in calcium. After fish (and fish bones) and dairy products, low-profile rhubarb is the substantially high in calcium -- not to mention naturally low in calories and high in vitamin C. Combine frozen pureed rhubarb with some frozen yogurt for a recipe that does double duty as a luscious dessert and dietary boost.
Next comes a trio of mocks that are designed for two groups: those who follow kosher dietary law and those who practice vegetarianism. Either can fully appreciate the meatless versions of Vegetarian Lasagna, Mock French Pate (based on mushrooms) and Vegetarian's Chopped Liver (based on walnuts and minced green beans). The lasagna combines traditional ingredients for this Italian classic along with crumbled tofu and herbs for a hearty main dish void of meat. "No meat" content appeals to vegetarians while kosher diets can partake of a meal that does not combine dairy products (the cheese) with meat (since the minced meat is omitted). The tofu packs a nice extra punch of low calorie, low cost protein besides making this recipe an all round winner. By the way, it freezes well too. Another unusual meatless offering is the Mock French Pate that combines fresh mushrooms and cream cheese for a stellar, authentic tasting pate. Since it has not pork -is perfect for kosher regimes as well) or the Vegetarian Chopped Liver for a recipe that is at once a trompe l'oeil and trompe de gout. Still on the kosher trail and for those with allergies to shellfish is the Mock Lobster salad, an ersatz seafood dish that makes modest haddock into a gourmet entrée. Developed by kosher caterers, this tasty, chilled salad is a noble rendition of its real counterpart. Incidentally, the dessert and Non-Dairy foods section of any kosher cookbook includes many recipes that would satisfy both kosher diners and those with lactose intolerance.
Nut allergy is another cause for diet vigilance and the Mock Pecan Pie is a modest Pecan Pie facsimile. Adapted from a country cookbook, and no doubt invented to allay the costs and calories of using real pecans, it renders a chewy, caramel filled pie that is without the hefty fat zap of the traditional two cups of pecans and uses oatmeal (cousin to fat-gobbling oat bran) for that characteristic nutty crunch. Substitute unsalted vegetable margarine too in the filling and crust to avoid those extra fatty calories.
"Mocks" originally hail from the depression or war era rationing -- when certain food staples were hard to come by and housewives made do. Today, they represent creative alternatives for a myriad of diet requirements -- and in some cases, can taste better than the originals. Which is important, since when you're the chief cook and bottle washer, making sure every one can eat, and more crucially, enjoy the same meal is nothing to sneeze at!"
