Jenny's Comfort Food....Macaroni & Cheese!~by Jenny Baxter of Jennys Kitchen

Winter’s cold brings coat weather and robust appetites. There is no better time to savor hearty comfort foods with a good bottle of local wine and a crusty loaf of bread then now. Comfort foods capture earthy flavors, bring warmth to our chilly bones and keep us coming back for more. Even the gloomiest of days this time of the year can be made brighter serving a tasty comfort food to our family and friends. Sundays are a great day for spending time at home, inviting a neighbor or friend for a simple supper, and filling the house with the aroma of bubbling pots of stews and soups. Now, there is one comfort food .....

that kids from 8 to 80 all love…macaroni and cheese! This dish is so easy to prepare that you will have no need to purchase that flavorless box stuff anymore. Here’s all that you need to make a delicious meal in a minimal amount of time and that is easy on the pocketbook too.

½ lb. chopped pancetta (Italian bacon)

2 cups heavy cream

1 package penne pasta

2 cups grated Gruyere cheese

1 cup grated Jarlsberg cheese

Bring a large pot of water to boil. When the water comes to a rolling boil give it one spray of olive oil in the can. Add the pasta and cook al dente. Drain. While the pasta is cooking, sauté the pancetta in a large frying pan. Add the cream and the cheeses and stir to combine.. Add the pasta and coat the pasta with the cream mixture. The pasta an be eaten at this point or placed into a greased casserole dish and baked for about 20 minutes until the top of the macaroni and cheese forms a crust. If you decided to bake it, then sprinkle another cup of cheese over the top. This dish is obviously not intended for those on a diet!!

Well, it’s thyme to go.
