This Week on Kwik Kook "Calaveras Visitors Bureau Pasta"~by Jenny Baxter
Well, now that school is back in session our lives seem to revolve around sporting events, school activities, music lessons, dance recitals, band practice and the list goes on and on. The demands at this time of the year test our culinary principles, which help to justify our decision to bring home some fast food or grab yet another rotisserie chicken from the market. But STOP! On nights like this I have a simple, “kwik” and delicious meal that....

your family will ask for time and time again. In fact if any of you attended the Visitors Bureau dinner in Utica Park last week this is the pasta Tad Folendorf and I prepared that received rave reviews! Here’s what you’ll need:
1 lb. dry penne pasta
Pint of heavy cream
3 toes chopped garlic
Jar sun-dried tomatoes packed in oil drained
4 oz. or more grated Asiago cheese (and more for garnish)
Cracked pepper and salt
¼ cup julienne of fresh basil
Cook the pasta according to the package directions. Drain, place into a large bowl and set aside.
In the meantime place the cream in a pot and add the garlic, pepper and salt. Heat the cream 5-6 minutes over medium heat until it coats the back of a spoon. Pour the cream over the pasta and gently stir. Fold in the cheese and the tomatoes. Place on a serving platter and sprinkle with more cheese and the basil. Serves 4-6
For those of that would like some meat with this pass a plate of grilled Italian Sausage around and watch your entire meal disappear in seconds!
