Easy Gourmet Pizza's For Graduation!~by Jenny Baxter of Jenny's Kitchen
This week on Kwi Kook, Jenny Baxter tells us how to make easy gourmet pizza's just in time for Graduation!.....For many of you this will be the busiest week in June. Why? Because it is graduation time! Pre-school, elementary school, junior high, high school and of course college graduations are top priority this week. Since I attended parochial schools my entire life the celebration of going from an elementary school right to high school was my first experience with pomp and circumstance. Loretto, the school that just closed in Sacramento. The attire was long white formal gowns and each girl held a bouquet of long stemmed red roses. Both of these special occasion festivities were family oriented, so when I graduated from college with my BA I decided to “kick it up a notch!” I was living on Fire Island then, an island off Long Island in New York. I rented a party boat, hired a band, sent invitations across our United States to friends and family and proceeded to prepare a fabulous hors’ d ourves buffet. When I graduated from the University of the Pacific in Stockton with my MA, my commemoration was just with my family once again. Now I don’t expect those of you preparing the meal for the evening to do as I did. To the contrary I am going to offer you something quite tasty and easy to prepare. You will have enough to do with ordering cakes, inviting friends and family to the big event, putting a little extra elbow grease into cleaning the house, not to mention carrying out the daily schedule as usual. So how does an international pizza buffet sound with a simple green salad to round it out?
Tuscany Pizza
1 box puff pastry
1 jar pre-made pesto
2 cups grated Mozzarella cheese
1/2 cup Parmesan cheese
Lay each thawed sheet of puff pastry onto a cutting board and roll into a rectangle. Spread the pesto over the top. Crimp the edges and sprinkle the cheeses over the top beginning with the Mozzarella. Bake at 400 degrees about 20 minutes. Serves 3 from each sheet.
Mexican Pizza
1 box puff pastry
1 small can red chili sauce
2 large cans sliced black olives
2 cups grated Monterey Jack Cheese
1 cup grated sharp cheddar cheese
1 lb. sliced Chorizo sausage
Lay each thawed sheet of puff pastry onto a cutting board and roll into a rectangle. Divide the remaining ingredients in half. Spread the red chili sauce over each sheet of pastry and crimp the edges. Place the olives and chorizo on top and sprinkle with the cheeses. Bake at 400 degrees for about 20 minutes. Serves 3 from each sheet.
Pacific Rim Pizza
1 box puff pastry
1 jar sweet and sour sauce
1 can drained crushed pineapple
1 head flowerettes only steamed, chilled and minced broccoli
½ lb cooked diced chilled shrimp
2 cups grated Gruyere cheese
Lay each sheet of puff pastry onto a cutting board and roll into a rectangle. Spread with half of the sweet and sour sauce and crimp the edges. Lay the broccoli, shrimp and pineapple on the top. Sprinkle with the cheese. Bake at 400 degrees about 20 minutes. Serves 3 from each sheet.
