This Week on "Chef Chat" James Talks Easter Morning Waffles!"
Murphys, CA...This week Executive Chef James Lehman of Ironstone Vineyards, will show you how to prepare "Yeast Raised Waffles". These waffles are a wonderful twist on a timeless classic. They are made with simple ingredients and the yeast adds a great, complex character and taste to those Easter Morning Waffles. Just a few minutes the night before and your morning will be complete...
Combine flour, yeast, sugar and salt in a medium mixing bowl, mix well. Combine butter and milk in a small saucepan and heat on stove top. The milk does not have to boil. it just needs to hot enough to melt the butter. When butter is melted, pour over flour mixture. Stir with a whisk until almost blended and then pour in the eggs and vanilla. Whisk until smooth, cover with plastic and place in fridge. This should be done the evening before you are going to make them. It must sit for at least 6 to 8 hours in the fridge. The next morning, the batter will have risen to twice its size. Whisk the batter again until smooth and portion into your waffle iron.
