Elémentaire TV Episode 22: V - Veloute. Jenny's Homemade Salad Dressing & Dave's Homemade Croutons

Angels Camp, CA...On today's show, Dave makes some delicious homemade croutons, followed by Jenny making some homemade salad dressing to accompany it. Elémentaire is the creation of two professional cooks dedicated to helping take the mystery out of making delicious meals from scratch. Our goal is to educate through the use of culinary terms and techniques and also inspire, through the use of the freshest seasonal ingredients, all who watch to make their own meals to enjoy at home.





V - Veloute

A sauce with a light chicken or fish stock mixed with a roux

Creamy Blue Cheese & Bacon Salad Dressing

Ingredients

1 cup mayonnaise

1 cup sour cream

¼ cup crumbled blue cheese

2 Tablespoons crumbled bacon

2 Tablespoons chopped fresh baby dill

salt & pepper to taste


Technique


Combine the sour cream and mayonnaise. Gently fold in the remaining ingredients. Serve over iceberg lettuce wedges.
NOTE: If you do not have self-rising flour place 3 cups all purpose flour, 3 ¾ teaspoons baking powder and 2 ¼ teaspoons salt in a bowl and combine.

Homemade Croutons

Ingredients

Some day old bread. A nice french bread with a good crust is my preference, cut into large cubes.
2 TBS bacon fat, olive oil or butter
4 TBS butter
1 clove of garlic minced.
2 TBS parmesan cheese, finely grated (optional)
Fresh herbs such as parsley, basil, thyme, rosemary, whatever your preference.


Technique

Heat oven to 350 degrees.
Melt bacon fat and butter over low heat in a small saucepan. Add the minced garlic. Gently cook to infuse the flavor for a minute. In a bowl, toss the bread crumbs in the melted butter mixture and spread onto a baking pan. Sprinkle with parmesan cheese, if using, and herbs. Bake for 20/30 minutes stirring often and checking for desired doneness.
