"Scotch Eggs" Easter Recipe from Jennys Kitchen!~By Jenny Baxter
Happy Easter Viewers! Before you know it, you will be up to your neck in filling Easter baskets, sending Easter cards, dying eggs, shopping for that special Easter Sunday outfit, and planning and cooking Easter dinner. The kids will be so excited on Easter morning with their ear to ear grins, laughter, and...
squeals of delight upon finding all the eggs the bunny has left for them. Now, as parents you wonder what am I going to do with all those left over hard boiled eggs?
Well, I have the perfect recipe for you. Scotch Eggs. They are easy to prepare and make a real eye catcher for breakfast. And they sure beat all those deviled egg sandwiches.
Scotch Eggs
1 lb. bulk breakfast sausage
6 hard boiled eggs
¼ cup flour
oil for frying
Peel the eggs. Divide the sausage into 6 equal portions. Wrap the sausage around the eggs. Place a tablespoon of flour into a paper bag and using two sausage covered eggs at a time shake them in the bag of flour. Place on a plate. Repeat until all the eggs have been coated. Now heat the oil in a frying pan and brown the sausage eggs on all sides. Drain and serve with some hash brown potatoes, fresh fruit and whole grain toast.(Sounds quite Yummy Jenny!)
