It’s hard to believe that the Olympics have to come an end. It has been thrilling to watch athletes from all over the world compete for the gold. I am so proud of our American athletes as I am sure many of you are!! For those of you that follow my column you know that Apolo Ono is my favorite!! I am elated that he will be ending his career by setting a world record, having won 8 medals for himself and America. That is quite a feat! So, when you are watching the grand finale Monday night make sure to indulge in this all-American dessert created with the Olympics in mind...

Red White & Blue Bites

1 cup flour

2 Tablespoons sugar

½ cup plus 2 Tablespoons butter NOT margarine

Work this mixture together until it forms a dough in either the bowl of a food processor or by hand. Press the dough into the bottom of a 13x9x2 pan. Bake at 350 degrees until the crust browns about 10-15 minutes. Once removed from the oven press:

1 cup chopped pecans into the crust. Let cool and refrigerate 30 minutes

Mix until blended:

8 oz. cream cheese

2 cups powdered sugar

Add:

2 cups prepared whipped cream ( heavy cream whipped with some sugar and vanilla)

Fold the mixture together until the ingredients are combined.

Remove the crust from the refrigerator and spread the cream cheese mixture over the top. Refrigerate for 30 minutes.

Remove from the refrigerator and place a basket of blueberries on one side and some sliced strawberries on the other. Serves 12

Well, it’s thyme to go.
