"Spinach Salad with Warm Bacon Dressing"~by Jenny Baxter of Jennys Kitchen

Well, with the excitement of the arrival of the Winter Olympics I thought you might be interested in a simple easy to prepare dinner. On those nights when you don’t want to miss an event this meal will please your families culinary flavor buds and get you in and out of the kitchen fast. Spinach Salad with Warm Bacon Dressing....

8 slices thick- cut bacon cut into ½ inch pieces

10 oz. bag cleaned and washed baby spinach

½ thinly sliced red onion

1 toe garlic halved

2 cloves minced garlic

2 teaspoons sugar

¼ cup cider vinegar

1 Tablespoon Dijon mustard

Sea salt and black pepper to taste

3 diced hard boiled eggs

¼ lb. mushrooms washed, dried and sliced thin

Cut one of the garlic toes in half lengthwise and rub it around the inside of the bowl. Place the spinach in the salad bowl. Fry the bacon in a pan until crisp. Remove with a slotted spoon and drain the bacon on paper towels. Discard all but ¼ cup bacon grease from the pan. Add the onion, garlic, sugar salt and pepper and cook until the onion is soft. Whisk in the vinegar and mustard loosening the browned bits from the bottom. Pour the dressing over the spinach and toss to coat. Divide between four plates and garnish with the eggs and mushrooms.

Ham and Cheese Bread

Loaf sour dough round cut in half

½ lb. thinly turkey breast

½ lb. sliced Swiss cheese

Diced roasted red pepper

Pesto

Spread the pesto over the tops of each round. Sprinkle the peppers over both sides. Lay the turkey over the peppers and top with the cheese. Broil until the cheese melts. Cut into wedges and serve. Serves 4
