Kiwis are so plentiful this time of the year. Most of us don’t know how to use them. We usually cut the kiwi in half and eat the centers with a spoon. Kiwis are great atop a lemon tart or along side fresh strawberries on a pavlova, which is a meringue shell filled with whipped cream and assorted berries. For those of you that enjoy adventurous easting how does a fresh kiwi salsa sounds with grilled fish or poultry? Fruit salsas are very flavorful. When preparing them make sure to decide on the texture you want and the color of the fruit you are using. Kiwis add a nice crunchy texture. When papayas are not in season you can substitute an avocado for this fruit. This salsa has a very refreshing and it has a zesty taste!...

Kiwi Salsa
1 diced papaya
4 diced kiwi
½ cup diced tomato
1 minced shallot
2 teaspoons lime zest
2 Tablespoons lime juice
1/4 teaspoon jalapeno chili
2 Tablespoons chopped cilantro
Salt to taste
Place the first four ingredients into a bowl. Add the lime zest and juice. Toss gently. Add the remaining ingredients, stir and refrigerate for an hour.
Makes 3 cups
Well it’s thyme to go.
