"Turkey Divan"~by Jenny Baxter of Jennys Kitchen
So, the turkey is still not gone. You’ve made your soup, eaten plenty of turkey with cranberries, packed turkey salad sandwiches for lunch, used the thigh meat for those spicy enchiladas, yet that Ziplock bag still has sliced turkey staring at you each time you open the refrigerator. Have I got a recipe for you! This dish is so simple to prepare and tastes great. Your family will wonder how you managed to trim the tree, wrap the gifts, decorate the house and mail off the Christmas cards and packages, yet still put a fabulous dinner on the table just for them....

Turkey Divan
Head broccoli
Leftover sliced turkey
Cup grated cheddar cheese (I prefer the white sharp Vermont cheddar)
1 can cream of mushroom soup
½ cup mayonnaise
1 roasted red pepper sliced thin
Trim a head of broccoli and slice it lengthwise into very thing sections. Steam or microwave the broccoli until it is crisp tender. Place the turkey on the bottom of a 13x9 pan. Place the broccoli and the peppers over the turkey. Mix the soup and the mayonnaise in a bowl until combined. Place this sauce over the vegetable and meat. Sprinkle the cheese on top. Bake in a 350 degree oven until the cheese melts and the casserole is hot, about 20-25 minutes.
Serve the Divan with steamed brown rice and a crisp cold salad with Dijon/Balsamic vinaigrette.
As for the left over cranberries, slice an apple or two and sauté in a couple tablespoons butter. Add the leftover cranberry sauce and combine thoroughly. Once this is cool serve over vanilla ban ice cream
