This Week on Cooking For One..."Grilling A Full Meal"~by Jenny Baxter of Jennys Kitchen
Grilling is a wonderful way to make simple foods interesting. I can make a full meal without setting a foot in my indoor kitchen just using my two grills and one burner on the outside grill. And only having to wash a spatula, a pan and a platter is even more enticing. An evening in the backyard, with or without a full moon, just seems to make the food taste better too. So in honor of all you grill masters, who want to stay out of the kitchen, skip the washing up and impress yourself or your guests without breaking your food budget here is an elegant little meal....

Moroccan Spiced Grilled Game Hens
Couscous with Pinenuts and Grilled Tomatoes
Grilled Steamed Broccoli Spears
Cucumber Yogurt Salad
Grilled Balsamic Peaches with Raspberries and Toasted Almonds
Game Hen
½ teaspoon EACH ground cumin, ground coriander, ground cardamom and curry powder
¼ teaspoon cayenne pepper
2 toes garlic mashed to a paste
1 large game hen quartered
Salt, pepper and garlic powder to taste
Stir the dry spices in a pan over medium heat about one minute. Remove from the heat and add the garlic mixing it into the spices. Loosen the skin from the flesh of the game hen and rub the paste onto the meat. Sprinkle the outside of the hen with salt, pepper and garlic powder. Grill the game hen until it is a golden brown approximately 10 minutes for the breast pieces and 15 minutes for the thigh pieces turning once. This can be served hot or at room temperature. This makes a great picnic dish.
Couscous
1 cup chicken broth
½ cup couscous
2 Tablespoons pinenuts
½ grilled tomato diced
Bring the stock to a boil. Add the pinenuts and the couscous. Turn the heat to low and stir until the liquid has been absorbed. Fold in the tomatoes
Cucumber Yogurt Salad
1 garlic toe
½ teaspoon salt
½ Armenian cucumber peeled and sliced thin
½ cup plain yogurt
1 Tablespoon dried mint
Mash the garlic and the salt into a bowl. Add the yogurt and mix. Add the cucumbers and gently fold into the yogurt mixture. Sprinkle the mint on the top.
Well, it’s thyme to go.
